Grist (via grist.tv) captured Michael Pollan’s thoughts on how food is at the center of many of the issues we face today including the energy crisis and the over-dependence on fossil fuels, the healthcare crisis, and climate change. The bottom line: Meaningful improvements in these areas can’t be accomplished independent of changes to our food system:
